Four pepperoni, the Italian word for ‘bell peppers’. I generally use the red, yellow and green ones to give my dish a touch of colour. Wash the pepperoni, heat the olive oil on high heat in a wok ( a wok has higher sides so you can stir fry without making a mess and the different zones of temperature assure evenly cooked food). Add the pepperoni and stir fry for about 10 minutes. Add brown sugar and apple cider vinegar (apple cider vinegar is effective for weight loss, but I simply love the taste) . Toss and turn for about another ten minutes and serve. Salt to taste only if necessary.
Lias tip: make sure all the ingredients are ready before you start cooking. Cut the peppers to a similar size so they cook evenly. The oil must be hot when you start cooking, and then reduce the temperature until the peppers have a touch of golden brown and the taste of sweet with a contrast of sour, the perfect mix! I never add salt!
