Lia’s style!
This particular prawn recipe is my own invention. Over the years I have tried and tested many stir – fry fish recipes, but this is my favourite. Prawn recipes must be quick and easy otherwise the prawn overcooks and this reduces its quality.
Ingredients: extra virgin olive oil ( 4 tablespoons for the sauce and 4 for the wok/pan) , soy sauce, brown sugar, water, 500 gr fresh prawns, ginger and 4 cloves grated garlic. My balcony fresh hot chillies.
Let’s make it!
- Make the sauce: mix 4 tablespoons extra virgin olive oil, ½ a glass soy sauce, 2 tablespoons brown sugar and two glasses water. Stir until the sugar melts and allow to stand for a few minutes.
- Shell about 500 gr prawns, cut along the back of the prawn to remove the vein.
- Heat extra virgin olive oil in a wok or a large frying pan until the oil is sizzling hot.
- Sauté ginger and garlic in the hot oil for about 5 minutes then add prawns. Allow to cook on high heat for 3 minutes.
- Add sauce mixture and stir-fry for five minutes.
- Reduce the heat to medium, remove prawns and keep stirring until sauce is thick.
- Put prawns in wok again and toss and turn so they can be covered with the creamy sauce.
- Optional: add chopped chillies.
